Today’s recipe came about purely because I had a hankering for rice crispy treats. Most of the time I take a lot of pleasure in making my bakes fairly elaborate with a lot of components and intricate decorations, however, today wasn’t one of those days. I wanted to make something, simple and delicious that I can snack on whilst watching Bake Off (more Bake Off content to come).
Although rice crispy treats are incredibly simple in theory, getting the balance right can be tricky, they can be tooth-achingly sweet and fairly one dimensional in flavour. For this recipe I made my own marshmallow, you can absolutely skip this step and use store-bought instead but I love the extra flavour you get from the brown sugar plus I always seem to have a surplus of egg whites so it seemed a good opportunity to use some up! In an attempt to tackle the sweetness I added some pecans for a nutty kick as well as some smoked sea salt. I love a salty sweet combination so there’s a good amount of salt in this recipe, feel free to reduce it if that’s not your thing!
One last thing before we get going; if you’re making your own marshmallow for these treats I’d suggest preparing the pecans and brown butter before getting started, the marshmallow is best used while still slightly warm so it’s a good idea to have all of your other components ready to go.
