Hello! I thought it was finally time to tackle a yule log. I’ve been somewhat discombobulated by the thought if making a yule log this year, I’m not sure why, I’ve made literally hundreds in my career but this year I felt a bit restricted and wasn’t sure where to start.
My brother and sister-in-law are hosting our family Christmas this year, and I’m in charge of dessert (naturally). When I asked if anyone had any preferences, the request came back: “no fruit or nuts.” This put a bit of a damper on my plans for a festive yule log packed with seasonal flavours. At first, I was a bit disappointed by the idea of a plain chocolate dessert but this recipe is far from plain. The white chocolate & crème fraîche cream is lovely and light and paired with the ganache and chocolate sponge it has just enough richness to feel indulgent without feeling like someone is going to have to roll you home after eating a slice.
Let’s have a quick look at what’s going on inside
Chocolate Sponge - This sponge is similar to a Genoise, it’s very light and can be a little tricky. If you follow the steps in the recipe you should get on ok! This sponge is like a horse, you mustn’t let it know you’re afraid, especially when it comes to rolling it up, just go in with confidence and you should be fine.
Crème Fraîche & White Chocolate Cream - This is a really easy and delicious cream, that can easily be altered to suit your preferences. It can take about 50g of add-ins from praline to alcohol although I like it just how it is!
Chocolate Ganache - The has a soft set which makes it easier to spread, it may seem too soft but once you start to work with it, it will start to firm up a bit, don’t be tempted to put it in the fridge as it’s essential that it’s soft in order to spread and pipe it easily, like the cream, it can take about 50g of add ins without affecting the consistency too much.
Add-Ins - If you’re feeling adventurous this recipe is easily adaptable! You can make it as simple or as fancy as you like - it’s a perfect blank canvas. Just because my family plays it safe doesn’t mean you have to. You can easily add a few boozy cherries, fresh raspberries or a layer of jam inside the roll or add a bit of booze.
