Hello and welcome to day 2 of the All Day Cake recipe advent calendar! Today we’re making one of the most satisfying bakes in the entire biscuit advent calendar: matcha checkerboard biscuits! These biscuits are a bit more time-consuming, but I’ve included some variations to help speed things up if you’re short on time.
This recipe yields a large batch, which makes it ideal for gifting. The great thing about these biscuits is that once they’re all layered up, you can wrap them in cling film and freeze the logs to defrost and bake whenever you like so they’re perfect for making in advance. If you’re not a matcha lover you can easily substitute the matcha for cocoa powder, hojicha or coffee or ground tea!
