Hello and welcome to the penultimate day of the recipe advent calendar! Today we’re making florentines. I’ve been making these every Christmas for years now, I’m not really sure if they count as a biscuit or as a confection but whatever they are they’re delicious.

These are incredibly customisable, you can use any flaked nut you like, and any fruit for the tops. I wanted mine to be nice and festive so I’ve used a combination of glacé cherries and dried cranberries as well as some pink and red sprinkles. They look more sophisticated without the sprinkles but I’m not really sure if Christmas is the time for sophistication.

A few notes before we start: I don’t like to say that you need a certain piece of equipment in order to make something, but I will say that in this instance, a silicone mat is the easiest option. This is the one I use. However, these florentines can also be made in a muffin or cupcake tray. I’ve included instructions for both a silicone mat and a muffin tray.
