Hello and welcome to day 21 of the recipe advent calendar and happy winter solstice! I’ve done a bit of a swticheroo with the order of the recipes, I hope you don’t mind. I just wanted to check the Anzac biscuits one more time as they’ve been giving me a bit of trouble and I want to make sure that the recipe is 100% perfect before sending it out. So today, instead I have a really easy recipe that can be whipped up in 5 minutes using ingredients you most likely already have in your pantry. Perfect if you need a last-minute gift for someone!

Every year, I get asked, “What do you do with your gingerbread house when you’re done with it?” Truth be told, usually my partner eats it. It cannot be overstated how much this man loves biscuits. This year, however, we’ve had biscuits coming out of our ears for months as I recipe-tested all of the biscuits for the advent calendar. So, I thought I should come up with a slightly more inventive way of dealing with my gingerbread house. Enter: chocolate salami.

I’m not really sure what the difference is between tiffin, rocky road, chocolate salami, and fridge cake, but for some reason, chocolate salami seems to be the most popular option around the festive season. I’m not sure why – I’ve never found salami to be especially festive.

Anyway, this recipe is a great way to use up any biscuit odds and ends. I’ve used gingerbread, but you can really use anything you have hanging around, or just use store-bought biscuits.
