Today we’re making a cookie inspired by the wonderful
, in her book Natures Candy, she has a recipe for a stollen inspired bundt cake, I loved this idea and decided to see if I could make a cookie version. Stollen seems like it would be right up my street, bread? Yes. Boozy fruit? Yes. Marzipan? Yes. But I often find the reality to be slightly disappointing, it always seems to be slightly dry, with not enough dried fruit and you only get marzipan one in every 3 mouthfuls. These cookies are much faster than making a traditional stollen, and in my opinion, hit the spot just as much, if not more.
