Hello! Today I have a recipe that is not at all appropriate for the season but look, I can’t face another summer fruit recipe, I need a break and to eat something savoury for once in my life. So we’re making these caramelised onion buns, super soft buns filled with gruyère cheese sauce (aka mornay if you’re feeling fancy) and caramelised onions and topped with a mountain of gruyère.
I need to warn you that this recipe is time consuming, it’s best spread over two days - the onions take at least an hour and a half to properly caramelise and the dough is best rested overnight. I know we’re still in the height of summer but bookmark these for a cosy autumn bake. My partner described these buns as “too cheesy” we’re clearly not as compatible as I’d thought because I wasn’t aware that that was possible.
