Apologies for the late newsletter this week. I’ve been wiped out with a cold and couldn’t taste anything for a few days, I wanted to make sure I could fully taste everything before sending out any recipes! I’m all better now and normal scheduling will resume next week.

For sometime now I’ve been watching CondimentClaire and her dad eat coffee eclairs at various bakeries around France, every time I see one of these videos I have an overwhelming urge to eat a coffee éclair. Sadly I don’t live in France so I don’t have the option of just popping down to my local bakery and getting one, if I want one I’m gonna have to make it myself, so here we are.
This recipe uses techniques from my in depth éclair post, I’d recommend reading it before trying these out unless you’re very comfortable with choux pastry.
