I have beef with one of the world’s poshest schools claiming ownership over meringue, strawberries and cream mashed together, perhaps I should re-name this weeks’s newsletter State School Scramble, I think it has a better ring to it. Regardless of its name Eton mess is a solid dessert, what’s not to like about meringue, cream and strawberries all muddled together?

A more traditional Eton mess

Although it’s delicious as it is I do feel like there’s some room for messing around here, in the words of Nicki Minaj “why be simple when you can be stunning”. I wanted to have a play around with some alternative ways of serving Eton mess so I’m mashing it together with not one but TWO British classics: Pimms and Bakewell tarts to create the collaboration of the summer. If you can’t get your hands on Pimms you can substitute it for any liqueur you fancy, limoncello and Grand Marnier both work well or if you want to keep it alcohol free you can leave it out all together.

I ought to warn you now that this tart is not very “messy”, it’s just not in my nature, I can happily make a big old mess of my kitchen but when it comes to desserts messy isn’t really my vibe. However there’s a good opportunity to use any leftover components to make some classic Eton mess served in glasses if you really feel that you’re missing the “mess” element.
