Now onto an eggcelent Easter bake! About a month ago I had the fun idea to use emptied out eggshells as moulds for cakes, I thought that I was being super original and creative, this week I’ve seen at least three other people do the same thing on Instagram and whilst this did slightly bruised my ego it doesn’t make it any less of a good idea. I’m always finding equipment that I’m desperate to buy but there’s no point in sharing recipes that use incredibly specific moulds that barely anyone owns so these little shell egg moulds are perfect, they’re free and you don’t end up with a kitchen full of stuff that you’ll never use again.
Although this recipe is somewhat fiddly I really think it’s worth it, the little cakes just look so sweet at the end. The financier mix itself is increggibly simple and comes together really fast. There’s also quite a lot of wiggle room when it comes to flavours, I made one test batch with chocolate financiers which i made by swapping the flour for the same amount of cocoa powder. If you want to go the eggstra mile you can fill them with whatever you like, curd caramel, jam and ganache all work well, or you can leave them unfilled (I would recommend doing this if you want to make things a bit easier), I filled mine with the last of my rhubarb jam and dipped them in white chocolate but you can use whatever chocolate you like. If you do choose to fill them it is eggstreamly important that they are fully frozen before dipping, I was very impatient and kept trying to dip mine before they were frozen and consequently dropped loads, don’t be like me!
Honestly. these eggs are so fun that they’ll look cute however you cheese to decorate them, I’ve been on a mission to grow my own edible flowers this year so I had an abundance of pressed violas but do whatever you like, I would recommend using some decoration rather than leaving them completely plain as it gives you a chance to cover up any lumps or bubbles in the chocolate.
