Hello, I hope everyone is well! It’s a little early in the season for forced rhubarb, but I managed to get my hands on some and couldn’t resist making a rhubarb cake!

This cake is inspired by

Kassie Mendieta
’s series of perfume cakes. She chooses a perfume and then recreates it in cake form. I love this concept—it pushes you to pair flavours that might be a bit outside of your comfort zone. As Kassie says, “If they smell good together, why shouldn’t they taste good together?”.

The scent that originally inspired this cake was Molton Brown Rhubarb & Rose. According to their website, this fragrance is “radiant with bright grapefruit, tart rhubarb leaf and creamy vanilla”. Along the way, I took some liberties, and in the end, I just added whatever I thought would work. I’m on the fence when it comes to rose, so I wanted to ensure there were plenty of other flavours present to balance it out. My goal was for this cake to be fragrant without it tasting like an actual bar of soap.
