Since it’s St Patrick’s day on Sunday I thought we’d do a little Irish inspired bake this week and what’s more Irish than Guinness!? I love Guinness cake! This recipe is adapted from Nigella’s chocolate Guinness cake, the method is similar to a classic ginger cake giving it an almost gingerbready texture and although you can’t really taste the Guinness it adds a lovely malty flavour that works beautifully with the cocoa to make a delightfully rich and sticky chocolate cake. Making this cake actually made me re-asses how I make my usual chocolate sponge, this method is so easy, it gave me some food for thought, I think a chocolate cake deep dive might be something interesting for a future newsletter…
