Hello, it’s me, the insane biscuit lady. Summer generally isn’t considered prime biscuit season, we all know that Christmas holds that title, but I’m a firm believer that biscuit boxes can (and should) be made year round. If we ignore biscuits for 90% of the year we end up missing out on all of the wonderful flavours that summer brings and that would be a travesty.
However, developing recipes from scratch requires a tonne of work and a lot of the time it just isn’t necessary so rather than making brand new recipes, I’ve recycled some of my existing biscuit recipes to curate a late summer lilac biscuit box (you know I love a theme 💜).
Of course I also have a brand new recipes for paid subscribers, so let’s chat about the biscuits in this box, the changes I’ve made to the original recipes and I’ve linked all of the updated recipes below.
Lavender Pinwheels (free!)
You’re probably sick to death of seeing these pinwheel biscuits, I’m constantly remaking them but I can’t help it, they’re such a fun bake and such an easy way of getting colour into a biscuit box. I swapped out the Earl Grey for a lavender for a bit of a change but honestly Earl Grey works just as well here or you could even do an Earl Grey and lavender combo.
Blackberry Bourbon Biscuits (new!)
I originally started playing around with this recipe as a variation of my mint chocolate trees however, it ended up changing so much that it morphed into a whole new recipe. These little blackberry biscuits are like a cross between a classic bourbon and a black forest. They consist of a crunchy chocolate biscuit, Chambord ganache and blackberry jam. They work well in any shape, I couldn’t resist making a few little sausage dogs.
Bl-ube-berry Marble Cookies (free!)
Did I think of the ube/blueberry pun and then shoehorn it into a biscuit? …yes. The good news is that ube and blueberries work pretty well together! But I have to be honest, the blueberries are doing most of the heavy lifting here, the ube adds some very subtle vanilla notes but it’s mostly here for ✨vibes✨ and to provide some wonderful natural purple colour.
This recipe was originally paywalled but I’ve made it free as a little summer treat! If you haven’t tried the original chocolate orange marble cookies, you should. Out of all of my recipes, this is one that I remake often just for my personal snacks.
Blackcurrant & Violet Marshmallows
Violet is a flavour that I often forget about, I only remembered its existence when making my first batch of these blackcurrant marshmallows. At an old job we made blackcurrant and violet macarons. Until eating one of those macs I’d never been a fan of violet, my only encounter with it being parma violets which, in my opinion, taste like perfume-flavoured chalk. However blackcurrant is such a wonderfully punchy flavour that it can stand up to the violet and the two work incredibly well together.
I used the marshmallow to pipe some sweet little flowers but you can always set it in a tin and cut it into cubes if you’re not in the mood to faff around, I quite like to do half and half so save a bit of time.
Tea And Biscuits Truffles
As Earl Grey packaging always seems to be purple, I’m more than happy to cheat a bit and include it in my purple cookie box. These are incredibly easy and require zero tempering since the truffles are rolled in crushed biscuits. I used my favourite trick of wrapping them in confectionary foil to make them fit into my purple theme.
And that’s it, the purple biscuit box is complete! The thing I love about biscuit boxes is that they’re so easy to mix and match, honestly these are hundreds more recipes that I could have shoehorned into this box but for now, I think this selection is perfect. And if you want more info on curating a biscuit box for any time of year, this post might come in handy!
Cuetest cookie box ever! 💜
Could you share the link to your cookie boxes? And also I loveee the purple/lavendar/lilac theme!
