Since I can’t stop making desserts into cakes I thought I’d do yet another one. Lemon cake has to be one of the best cakes out there, the combination of sweet, tangy and creamy is one that can’t be beaten! This is a cake that combines all of those classic lemon cake flavours plus a good chunk of roasty toasty meringue flavour and that classic lemon meringue pie crunch.
I’ve been seeing long cakes all over my Instagram feed and I was desperate to re-create one, this cake is a bit more work than a regular circular cake but it makes an absolutely stunning centrepiece, however, it can’t be moved once decorated so bear that in mind! If you fancy making this into a round cake instead, these quantities will be enough for a tall, 4 layer 6” cake or a 2 layer 8” cake. You’ll just have to reduce the bake time by 10-20 minutes.
