Hello! A little PSA before we get into today’s recipe. Over the next month I’m going to be celebrating summer fruit season with Jammy June; I’m going to be sending out an extra post every week featuring a jam or compote recipe. This is just for fun and to highlight some of my best jams, sometimes I feel like they get lost in the sauce. The recipes will all be free and come into your inbox every Tuesday, tell your mates!

I’m back with another unofficial princess cake. This time, our cake’s namesake is Moana. Now, did I decide that I wanted to make a piña colada cake and then shoehorn it into this series? Yeah, kinda. But I do think that Moana would love this cake, it’s full of bright, tropical flavours and tastes like eating a slice of sunshine.

I would like to caveat this post by saying I’m not a Disney adult, I just like to give myself parameters to work within as I find that it helps with creativity!

The Moana

If you’re unaware of my princess cake series, it’s a series in which I make cakes inspired Disney princesses, in the style of traditional Swedish princess cakes (prinsesstårta), this way I can change up the flavours and colours without offending the purists because technically I didn’t call the cake a “princess cake”. If you want to know more about classic(ish) prinsesstårta, you can read about it here and if you missed part 1 where I made a blueberry & Earl Grey cake inspired by Rapunzel, you can read it here.
