Hello and welcome to day 20 of the recipe advent calendar! Today we’re having another biscuit break to make these chewy peppermint caramels. I am a peppermint lover and one of the best things about the festive season is the resurgence of peppermint, if it’s not for you just leave it out and you’ll have lovely salted caramels instead.
These caramels are chewy, buttery and delicious, they do require a bit of patience and a sugar thermometer but they’re so worth it. Out of all of the things I’ve made for the advent calendar so far these are the one thing that I can’t stop eating.

Peppermint Caramels
Equipment - 8” x 8” square tray (the size doesn’t matter too much), digital or sugar thermometer, wax paper.
Ingredients - Makes around 50 toffees
150g glucose
200g caster sugar
100g light brown sugar
260g double cream
75g butter
1/2tsp flakey salt
10-15 drops peppermint extract (optional)
Method
Line an 8” x 8” square pan with parchment paper.
Boil the cream, salt and peppermint extract and set aside, you can taste the cream to make sure the peppermint levels are right for you.
Make a direct caramel with the glucose and caster sugar, this is best done in a small-medium pan, it makes taking the temperature easier.
When it reaches a dark amber colour add the light brown sugar followed by the cream, whisking it in 1/3 at a time. This will create a lot of steam so watch your hands!
Add the butter and whisk in.
Continue to cook until the temperature reaches 120°C/250°F.
Remove from the heat and transfer to your lined tin.
Leave to cool for at least 2 hours before cutting.
Cut to required size, I cut mine 2cm x 4cm and wrap in wax or greaseproof paper.
These will keep in an airtight container for up to 4 weeks.
