Why do you choose to incorporate the cucumber?

It just adds to the general Pimms-y flavour! Without it it’s more like a nice strawberry jam but you can leave it out if you don’t fancy it

Question: do you ever roast the strawberries? I find the groceries strawberries to be so tasteless that I avoid them….i ask because I want to make this out of strawberry season. Thanks for any advice.

Hi! I don’t usually bother roasting before making jam, we’re boiling it down a lot anyway which intensifies the flavour.

If I’m making a jam out of season I always use frozen fruit rather than fresh, it can be tricky finding good frozen ones, I’m in the UK so I tend to choose UK grown ones for both fresh and frozen!

This sounds wonderfully summery. I experimented with a Pimms jam about 10 years ago but never tinkered enough to get a recipe I was really pleased with. And I never dared include the cucumber element! Will be giving this a go for sure.

I think the cucumber is really what takes it from a nice strawberry jam to a Pimms jam, it adds an almost savoury element which I quite like!

Yes I use frozen all the time! It’s much more budget friendly and it means you get fruit picked at the height of the season!
