Hi I was wondering if I can use 9" pan on this and if yes, how long i should bake it for? Thank you!!

Hi! For one 9” tin I’d use the full amount of cake batter and, drop the oven temperature to 150c fan and bake it for around 40+ minutes, I’m not sure of the exact timings without making it myself but you’ll need to bake it until it bounces back in the middle and a skewer comes out clean.

If you want to make two 9” layers you’ll need to make double the amount and I’d also double the buttercream.

Sophie totally new to this , can i use a stick blender to mix everything ?

I would mix everything by hand or in a mixer then just use the stick blender to blend the date & water mixture or you can throw everything in a food processor 😊
