Hello and welcome to week 7 of our GBBO bake along! I feel like we’re finally in the home stretch, I’ve loved doing the bake along but coming up with an idea, doing multiple recipe tests and writing it up within 3 days has been a lot!
This week was dessert week in the tent, there were some interesting tasks and some questionable flavour combinations so let’s have a quick chat about the episode before getting into the recipe…
Signature
This might be an unpopular opinion but, for me, the only acceptable way to eat meringue is accompanied by a shedload of summer berries and a mountain whipped cream, I’m not interested in any other combinations. However, I do appreciate that the contestants had to come up with something with a bit more pizzazz in order to impress the judges. Georgie’s marzipan plums sounded right up my street and I loved the look of Dylan’s coconuts.
Although I don’t have a meringue nest recipe (yet) I’ve linked some meringue-y bakes below.

Technical
As Sumayah said “no one finishes dinner and thinks ohh I fancy a spotted dick” I’m all for old school steamed puddings but spotted dick has never really appealed to me. Bit of a boring technical overall, there’s so many amazing desserts to choose from, I would have thought that they’d be able to come up with something more fun!
Showstopper
The big one! I was really shocked by how many rogue flavours the bakers added to their tiramisus and wasn’t at all surprised that the bakers who kept it simple did better in this task. The addition of strawberries or lemon to tiramisu seems totally crazy to me. I thought that Georgie’s sounded the best overall, I’m here for the addition of hazelnuts and was impressed with the look of Christiaan and Dylan’s. Since I already have a tiramisu cake recipe I decided to share another tiramisu-based recipe this week so we’re making tarts! I used to make a version of these tarts in a previous job, they’re delicious, fairly simple and look really impressive!
